What're those things on their heads they wear like you see on the mummy coffins? Better yet, what kind of headwear did they wear in general?

Usually Egyptin headdresses were just linen. As for the pharohs, there were three styles of headdress: the papyrus frond, the lotus blossom, and the combined papyrus/lotus headdress. Papyrus represented Lower (Northern) Egypt, lotus represented Upper (Southern) Egypt, and the combined represented the unification of Egypt.
